Much more than just a restaurant, Entropy Restaurant is a place for sharing ideas about circularity and anti-waste in all its forms. Because nature offers us so many beautiful things, we want to pay tribute to it and make the most of the products that cross our doorstep. It’s vital for us to work with people who are passionate about showcasing our terroir and who are also thinking about an intelligent way of working for our future. Accompanied by a young and atypical team, chef Elliott Van de Velde invites you to discover his world guided by naturalness and intuitiveness.
Entropy Restaurant is the gastronomic section of our ASBL Hearth Project, with which we have been fighting food waste and social precariousness since 2019. Our approach is based on 3 complementary areas of action: prevention of food waste, social impact and training & education. That’s why we’re setting up all our actions in a single location to raise as many people as possible’s awareness of these issues.
